Kimbap & Sushi Korean kimbap \(or gimbap\) and Japanese sushi are dishes made from rice, vegetables, and other ingredients and served in bite-sized slices. Kimbap is made with bap \(cooked rice\), vegetables, and optionally, cooked seafood or meat rolled in gim \(dried sheets of seaweed\). Sushi is made with vinegared rice \(sushi-meshi\), typically seasoned with sugar and salt, and combined with a variety of ingredients, such as seafood, vegetables, or meat. Sushi has numerous styles, and may be served wrapped in nori \(dried sheets of seaweed\) or simply placed on top of shari or sumeshi \(vinegared rice\).
